

Ellijay Mushrooms is a sustainable mushroom farm nestled in the foothills of the Appalachian Mountains that was started in 2018. Located in Ellijay, GA, they grow Shiitake, Golden Oyster, Blue Oyster, and Lion's Mane mushrooms in ten greenhouses and two indoor growing containers. They grow their fungi on 171 acres of land shared with Buddhist monks.
Mushrooms are nearly 92% water. The crisp mountain water of the Appalachians makes Ellijay Mushrooms unique. It’s similar to how water can affect the consistency and flavor of other foods, like bagels and grapes.
